We are seeking a full-time Cook to support our kitchen operations. The role involves preparing and cooking a variety of dishes, with a focus on Japanese cuisine, while maintaining high standards of food quality, presentation, and hygiene.

Key Responsibilities:

  1. Prepare and cook food items in accordance with menu requirements and kitchen standards
  2. Examine food ingredients to ensure freshness, quality and suitability for consumption
  3. Portion, assemble and present dishes in accordance with restaurant standards
  4. Regulate temperatures of ovens, grills and other cooking equipment
  5. Store food in temperature-controlled facilities in compliance with food safety requirements
  6. Prepare and handle raw ingredients, including seafood, ensuring proper hygiene and safe food handling practices
  7. Prepare Japanese cuisine items, including sushi (such as nigiri and maki) and sashimi, in accordance with established kitchen procedures
  8. Apply appropriate techniques in slicing, portioning and assembling food items to ensure consistency and presentation
  9. Assist in the preparation and seasoning of sushi rice to achieve appropriate texture and balance
  10. Maintain consistency in food presentation and portion control in line with Japanese cuisine standards
  11. Maintain cleanliness of kitchen and work areas in accordance with health regulations
  12. Assist in meeting special dietary requirements where required

Support kitchen operations during peak service periods

Preferred Skills & Experience

  1. Experience working as a Cook in a high-volume restaurant environment, preferably within a Japanese or sushi-focused kitchen
  2. Experience in Japanese cuisine or sushi preparation is highly desirable
  3. Ability to handle raw ingredients (including seafood) safely and appropriately
  4. Understanding of food safety and hygiene standards

Ability to work in a fast-paced environment

Requirements

  1. Relevant qualification (Certificate III in Commercial Cookery or above)
  2. Minimum 1-year relevant work experience

Flexibility with working hours, including evening and weekend shifts as required by restaurant operations.
