Job description:

We are seeking an experienced and motivated Chef to oversee the day-to-day kitchen operations at Ippin Don, a busy full-table-service restaurant. The successful candidate will be responsible for preparing and cooking Taiwanese-style rice bowls, ramen, and other menu items, while ensuring consistency in taste, quality, and presentation. The role also involves managing kitchen workflow in a fast-paced environment, supervising kitchen staff, and supporting the smooth operation of a full-table-service dining kitchen. Strong organisational skills, attention to detail, and the ability to lead a team while maintaining strict food safety and hygiene standards are essential for this position.

The Tasks for the Position Include:

  1. Planning, designing and updating menus for Taiwanese-inspired dishes, including BBQ rice bowls, ramen, set meals and seasonal specials, with consideration to food costs, ingredient availability and customer demand.
  2. Preparing, seasoning and cooking a range of dishes, including grilled meats, broths, ramen, rice bowls, fried items, sauces and side dishes, ensuring consistency in flavour, quality and presentation.
  3. Monitoring the quality of dishes at all stages of preparation, cooking and presentation, and making adjustments where required to maintain the restaurant’s standards.
  4. Overseeing day-to-day kitchen operations during service periods to ensure efficient workflow, timely food preparation and smooth coordination in a busy full-table-service environment.
  5. Supervising and training kitchen staff in cooking techniques, food preparation procedures, portion control, plating standards and safe food handling practices.
  6. Instructing kitchen staff on the preparation, cooking and presentation of menu items to ensure consistency and adherence to established recipes and service standards.
  7. Managing stock levels and ordering food supplies, including checking deliveries, monitoring ingredient quality, and ensuring proper storage, labelling and stock rotation.
  8. Estimating food requirements and controlling kitchen costs by minimising wastage, monitoring portion sizes and maintaining efficient preparation practices.
  9. Ensuring compliance with food safety, hygiene and sanitation requirements, including maintaining a clean kitchen and following all relevant food handling procedures and WHS standards.
  10. Collaborating with management and front-of-house staff regarding service requirements, customer preferences, menu improvements and the smooth delivery of food service.

The Skills Required for This Position Are:

  1. Relevant trade qualifications, including Certificate IV in Commercial Cookery and Diploma of Hospitality Management, or equivalent.
  2. A minimum of 1 year of relevant experience as a Chef in a commercial kitchen, preferably preparing Taiwanese cuisine.
  3. Demonstrated capacity to plan and develop menus, manage kitchen operations, and lead kitchen staff in a fast-paced environment.
  4. Thorough understanding of food safety, kitchen hygiene, and HACCP principles.
  5. Well-developed organisational, communication, teamwork, and time management skills.
