Thumby Bay Hotel – The Red Roof is seeking a skilled and motivated Chef to join their kitchen team and contribute to the delivery of high quality meals that reflect its regional hospitality and commitment to great food. This role suits a culinary professional who thrives in a fast paced environment and enjoys working collaboratively within a small, dedicated team.

About the Role

The Chef will support the day to day operations of the kitchen, ensuring consistent food quality, efficient workflow, and adherence to safety and hygiene standards. You will play an active role in menu development, food preparation, and maintaining smooth service across all meal periods.

Key Responsibilities

  1. Contributing to menu planning and designing dishes that align with customer expectations and seasonal availability
  2. Managing ingredient ordering, stock rotation, and cost considerations to support efficient kitchen operations
  3. Overseeing the preparation, cooking, and plating of meals to maintain high presentation and taste standards
  4. Working closely with management, dietary professionals, and front‑of‑house staff to resolve food service matters
  5. Demonstrating cooking methods and guiding team members on kitchen procedures and best practices
  6. Upholding strict food safety protocols and ensuring compliance with hygiene and sanitation regulations
  7. Assisting with staff onboarding, skill development, and performance support where required
  8. Applying appropriate food storage, freezing, and preservation techniques to maintain product quality

Skills & Experience Required

  1. Minimum AQF Diploma in Commercial Cookery or equivalent qualification
  2. At least 1 year of industry experience in a commercial kitchen environment
  3. Strong understanding of food safety standards and kitchen operations
  4. Ability to work efficiently under pressure while maintaining attention to detail
  5. Good communication skills and a collaborative approach to teamwork
